How to Clean & Use Dried Morels

1. Clean while completely dry (salad spinner method):
For the easiest grit removal, you want the mushrooms fully dehydrated before cleaning.

  • Place the dried morels in the basket of a salad spinner

  • Fill with clean, cool water

  • Spin/agitate vigorously — dried morels are quite sturdy and can handle a lot of movement without damage

  • Grit and debris drop to the bottom while the mushrooms stay in the basket

Lift the basket out and discard the dirty water. If needed, repeat once more with fresh water.

 

2. Reconstitute for cooking:
After cleaning, place the dried morels in a bowl and cover with warm water, stock, or wine. Soak for 20–30 minutes, until fully softened and aromatic. Strain and reserve the soaking liquid, then pat the morels dry before cooking. A small handful can easily carry an entire dish.
