The Truffle Pantry

New to truffles? The pantry products are the easiest place to begin. Use truffle salt or oil as finishing ingredients, tartufata for pasta and crostini, white truffle butter for warm dishes, and carpaccio when you want visible slices on the plate.

Gentleman Forager offers select fresh truffles in season, including Italian truffles from Sassone Tartufi and Pacific Northwest truffles when available.
 

Availability changes by species, season, harvest conditions, and shipping timing. When fresh truffles are available, they are listed in the shop with current pricing and ordering details.
 

Fresh truffles are the most aromatic and seasonal truffle option, best shaved over warm dishes just before serving.

Truffle Varieties & Timing

  • Black Summer Truffle (Tuber aestivum) – Mild earthy flavor with subtle garlic notes. Versatile for everyday gourmet dishes and excellent value.

  • Burgundy Uncinato Truffle (Tuber uncinatum) – Rich woody aroma with hazelnut undertones. Ideal for pasta, eggs, and hearty winter dishes.

  • White Truffle (Magnatum Pico) – Intense pungent garlic and earthy aroma. The most prized truffle, perfect for shaving over risotto and meat.

  • Winter Black Truffle (Melanosporum) – Deep complex chocolate and earthy flavor. The signature luxury truffle for sauces and butter.

  • Bianchetto Truffle (Tuber Borchii) – Delicate garlic-hazelnut aroma. Perfect for lighter dishes and finishing oils.

How to Use Truffles

  • Truffles are best used as finishing ingredients. Fresh truffles are usually shaved over warm food just before serving, while pantry products like truffle salt, oil, tartufata, butter, and carpaccio make it easier to bring truffle flavor into everyday dishes.
     

  • Start simple. Eggs, pasta, risotto, potatoes, mushrooms, steak, pizza, crostini, popcorn, and warm bread are all good places to begin.
     

  • Use heat carefully. Warm food helps open truffle aroma, but high heat can dull it. Add truffle products near the end of cooking or right before serving.
     

  • Use less than you think. Truffle flavor is aromatic and can become heavy if overused. Start small, taste, and add more if needed.
