Huitlacoche (Corn Truffle) — Frozen, Ready to Use

Huitlacoche—often called corn truffle—is a prized ingredient in Mexican cuisine, valued for its deep, earthy flavor with notes of roasted corn, mushroom, and a subtle natural sweetness. Ours is harvested at peak maturity and frozen immediately to preserve texture and flavor. It arrives fully cleaned and ready to use—no prep required. A 1 lb bag yields approximately 6–8 servings, making it easy to incorporate into multiple meals.

If you’ve never worked with huitlacoche before, think of it as a rich, savory filling—similar to a cross between mushrooms and roasted corn. It cooks quickly and pairs naturally with simple ingredients you already use. At the same time, it’s long favored by chefs for the depth it brings to a dish—adding a layer of complexity that’s difficult to replicate with anything else.

How to use it:

Tacos & quesadillas — sauté with onion, garlic, and a little oil or butter

Eggs & breakfast dishes — fold into scrambled eggs or omelets

Pasta or grain bowls — finish with cream, butter, or olive oil

For something more elevated:

Fold into a cream sauce with garlic, shallot, and white wine, served over pasta or roasted chicken Use as a filling for handmade ravioli or empanadas, finished with butter, lime, and fresh herbs

Simple prep: Sauté straight from frozen over medium heat for 5–7 minutes until heated through. Season to taste. A versatile ingredient that works just as well for a quick meal as it does for more refined, elevated cooking.
