About Gentleman Forager
From Spore to Shelf
Gentleman Forager sits in a very particular corner of the food world: where our roots in commercial cultivation, deep woods foraging, chef-driven wild foods, university-level education, large-scale events, and functional mushroom beverages all overlap. We don’t just sell mushrooms; we’ve lived with them from spore to shelf to can.
Long before “adaptogenic” became a buzzword, Gentleman Forager was operating as a commercial mushroom cultivator—running controlled grows, dialing in strains and substrates, and supplying specialty mushrooms to restaurants and retailers across the Twin Cities. That same network expanded into wholesale wild foods, moving seasonal chanterelles, morels, ramps, berries, and other foraged ingredients into some of the region’s most respected kitchens.
From there, the brand pushed into territory almost no one else occupied. Gentleman Forager created Forest to Fork, the first wild food grocer of its kind, complete with a towering glass grow chamber where customers could watch mushrooms fruit in real time while they shopped. We hosted wild food dinners, pop-ups, and festivals, and taught mushroom identification to thousands of people—from casual enthusiasts to students at major universities—helping shape how a whole region thinks about fungi and wild foods.
When the pandemic closed dining rooms and retail spaces, it didn’t end that work; it redirected it. Drawing on years of cultivation, foraging, and formulation experience, Gentleman Forager began creating products people could reach every day—starting with Headwater Performance Fuel™, a lightly sparkling mushroom beverage that combines fruit-forward refreshment with support for everyday well-being. Each caffeine-free variety features one mushroom extract paired with L-theanine and vitamin C, and is lightly sweetened with organic agave. The same standards that guided our wholesale and wild food work—ingredient integrity, transparency, and respect for the customer—now guide everything we put in a can or bottle.
Today, Gentleman Forager is:
-
A forager and trusted wild-food supplier – We forage ourselves and work with a strong network of Pacific Northwest partners to bring wild mushrooms and greens to our customers year-round. Although we began as a large-scale cultivator, we no longer grow mushrooms commercially. Our cultivated mushrooms come from partner farms that have consistently supplied us with superior products for more than a decade.
-
An educator and community builder – Classes, events, and experiences that make wild food approachable, safe, and deeply enjoyable instead of intimidating.
-
A functional mushroom innovator – Beverages and other products that translate years of hands-on fungal knowledge into modern, everyday tools for better living.
Plenty of brands talk about mushrooms. Gentleman Forager is one of the few that has grown them, hunted them, taught them, cooked them, retailed them, and now formulates with them—experience built over nearly two decades.
Our aim is simple: to use fungi and wild foods to help people feel more connected, more curious, and more alive—whether that starts with a muddy pair of boots, a cold can of Headwater, or a first glimpse of what’s really growing in the woods.
